Founded in 1995 by Bill and Michelle Tressler in Green Bay, Wisconsin, Hinterland Brewery is leading a movement of food and beer lovers who are tired of the expected, and instead, are seeking an inspiring experience that satisfies their curiosity. Offering storied and hand-crafted beers with unique contemporary American cuisine, Hinterland Brewery allows guests to taste beyond their boundaries while encouraging them to grasp their own pioneering spirit.
Bill and Michelle Tressler started Hinterland Brewery in an old cheese factory just outside of Green Bay, Wisconsin (Bill’s hometown) with nothing more than their own limited funds, sweat and passion. It was 1994, and they were 24 year old college grads grinding out corporate jobs and dreaming of doing something that people actually appreciated. At the time, Bill was spending his free time trying to land a record deal while drumming with the band ‘Lucky’ in San Francisco. But, he eventually landed him a job as Editor for Beer, The Magazine, and it was just the introduction he needed to the beer-making world. Bill was immediately hooked and it was the beginning of an explorative journey that ultimately led to Hinterland Brewery.
The meaning of ‘Hinterland,’ by the way, is a land beyond the known port city or the unexplored rural country. Early German immigrants in Wisconsin once referred to the Green Bay area as ‘The Hinterland’ since it was an unexplored area. Bill and Michelle approach their brewery project with the same pioneering mind-set, as they trek into the unknown and push themselves to experiment with interesting combinations of perfectly paired, inspiring flavors.
Not long after opening, the Tresslers expanded Hinterland Brewery, renovating a turn-of-the-century Green Bay meat-packing warehouse into a production house. They
also added a restaurant featuring farm-to-table culinary experiences.
The Tresslers work closely with Brewmaster Joe Karls to craft everything from somewhat traditional beers and popular pilsners to exotic and daringly different renditions of specialty brews. It is their hope that visitors of Hinterland can push out of their comfort zone and have a mind blowing, unexpected taste experience.
Now, almost thirty years later, Bill and Michelle are still leading the pioneering spirit of Hinterland Brewery with a fantastic collection of craft beers and three unique restaurants. We are happy to share two of their popular offerings with our Craft Beer Club members. Enjoy!
