What are Isohumulones?

Isohumulones are chemical compounds found in hops that contribute to the bitter taste of beer. The bitterness Units (IBU) scale, with one IBU corresponding to one part-per-million of isohumulone.

What is beer color determined by?

Beer color is directly related to the malt content. The most common color is a pale amber produced from using pale malts. Dark beers are usually brewed from a pale malt or lager malt base with a small proportion of darker malt added to achieve the desired shade. Caramel can also be used to darken beers. Very dark beers, such as a stout, use dark or patent malts that have been roasted longer.
